We love The Flat Head knits, period. These are a newer variety, made of soft hanging knit fabric that is carefully knitted very slowly without applying extra tension to the thread. These still use The Flat Head's "three-needle, one-off" stitch around the collar to keep your collar in shape no matter what you throw at it.
